Often referred to as silver or white, these rums are actually lightly aged (1-3 years), but have had any color filtered out. They are typically molasses based (as opposed to the cane juice-based rhum agricole, clairin, or cachaça). Flavors range from light (Bacardi, Caña Brava, Plantation 3 Star, El Dorado 3) to more flavorful blended options (Probitas, Ten-To-One).
2 dash
A high proof, unaged rum produced in Jamaica and bottled around 63% ABV (126 proof). Wray & Nephew Overproof is the most popular example. Some recipes specifically specify Rum Fire for its intense funky notes. Other options such as Worthy Park Overproof (formerly Rum-Bar) can usually be substituted.
0.5 oz
A red colored passion and other fruit flavored syrup commonly used in 1930s-era tropical drinks but is now more of an uncommon ingredient. It was famously used in the original recipe for a Hurricane.
0.5 oz
A very thick, unsweetend coconut milk. It is made in the same way as coconut milk, by simmering shredded coconut and water, except the coconut cream uses 4 parts coconut to 1 part water. It is the same consistency as heavy (full fat) cream. This is different from sweetened cream of coconut like Coco Lopez. She put the lime in the coconut, she drank 'em bot' up.
1 oz
A citrus juice used in many cocktails, both for its sweet and tart taste and its color. Orange juice, unlike lemon and lime, can be kept fresh for days. In a blind taste test, most people liked day-old orange juice.
0.75 oz
The second most common juice used in cocktails. This citrus juice is about 6% acid; 4% from citric and 2% from malic, with small amounts of succinic acid (this is what gives it a little bloody taste). Lime juice should be used the day it is squeezed, some like it freshly squeezed and others like it a few hours old.
Flash blend or shake ingredients well until coconut is frothy. Pour into a collins glass. Garnish with an orchid and umbrella. #shake #blend
Created by William Prestwood at the Pagan Idol in SF, this recipe uses the funky overproof Rum Fire almost like a bitters. Alternatives would be Wray and Nephew or Rum Bar overproof options. For the lightly aged/filtered rum, which is the main spirit, something like Planteray 3 Stars would also work.
