A molasses-based rum distilled in Guyana. Most often blended from the historic wooden pot and column stills of the Diamond Distillery (DDL) and aged for up to 15 years in the tropical climate. This process produces rich, flavorful rums that are major components of 'Navy' style blends.

Often referred to as silver or white, these rums are actually lightly aged (1-3 years), but have had any color filtered out. They are typically molasses based (as opposed to the cane juice-based rhum agricole, clairin, or cachaça). Flavors range from light (Bacardi, Caña Brava, Plantation 3 Star, El Dorado 3) to more flavorful blended options (Probitas, Ten-To-One).

An alcoholic beverage flavored with brewed coffee and sugar. You can make your own, here is a recipe from Serious Eats: First, cold-brew 1/4 cup of fine ground coffee and 1.25 cups water for 12 hours in the fridge. Strain through a filer into a sealable glass jar. Make a simple syrup by combine 1 cup of sugar and 1 cup of water, bring to a boil to dissolve and let cool. Add the syrup to the mixture, with a vanilla bean and 1.5 cups light rum. Let the mix steep for 3 days, then remove the bean. Bottle your liqueur and enjoy!

This syrup swaps in golden-hued demerara or turbinado sugar as opposed to processed/bleached white sugar. This gives a deeper, almost caramel-like flavor with a funky molasses nose popular in tropical drinks. We always use 1:1 syrup unless otherwise noted in the recipe itself.

The butterfat layer skimmed from the top of milk before homogenization, contains more than 35% milk fat. Also called single/double cream and whipping cream, although these may also add thickening agents making them less useful for mixing in cocktails. This is used as a foaming agent and for fat-washing in cocktails.

Pour demerara syrup, rum and coffee liqueur into a double old fashioned glass filled with a large rock of ice. Stir to mix and dilute. Float fresh cream on top and stir gently. #build #ontherocks #mrblack


“Yeah, well you know, that's just like, your opinion man.” Using a quality coffee liqueur is important. Mr. Black or St. George NOLA work very well here. If stuck using a lower quality, sweetened liqueur like Kahlua or Tia Marie, you may need to increase the amount to get a stronger coffee flavor but it will be overly sweet so you’ll want to omit the Demerara syrup.
